While I'm personally not a big fan of Apple Kugel (is it a dessert or a side dish?), I do really enjoy eating it during Passover. Something about the bland and heavy feeling of Passover food makes Apple Kugel a welcome Pesach dish.
6 Golden Delicious apples, peeled and sliced thin2 eggs, beaten1/2 cup potato starch1/4 cup oil3/4 cup sugar1/4 cup orange juice1/2 cup chopped walnuts
1. Mix apples, eggs, potato starch and oil. 2. Pour into an 8 inch square pan3. In a separate bowl, mix sugar, juice and walnuts. 4. Pour over apple mixture. 5. Bake at 350 degrees Fahrenheit for 1 hour. 6. Serve cold or at room temperature.NOTE:This recipe can be doubled and baked in a 9x13 inch pan.SOURCE:Word of Mouth Kosher Catering.
