1. Preheat oven to 425 degrees Fahrenheit (220 degrees Celcius). 2. Spray a pyrex baking dish with non-stick spray. 3. Cube all vegetables. Add oil and a pinch of salt and pepper. Pour into baking dish. 4. Bake for one hour.5. In a skillet, bring cream and onion soup to a boil. Pour over potato mixture. 6. Sprinkle with grated cheese. 7. Bake uncovered for 15 minutes. 8. Serve bubbling hot.
